Cooking fun: Shrimp Tetrazinni

 

Shrimp Tetrazzini


INGREDIENTS:

8 oz uncooked linguine
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1/2 teaspoon lemon-pepper seasoning
1 3/4 cups Progresso® chicken broth (from 32-oz carton)
1/2 cup half-and-half
2 tablespoons dry sherry, if desired
1 1/2 cups frozen cooked deveined peeled medium shrimp, thawed, tail shells removed
1 cup edamame or peas
 
Topping
2 tablespoons butter or margarine, melted
1/3 cup Progresso® plain bread crumbs
2 tablespoons shredded fresh Parmesan cheese
DIRECTIONS:
  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook linguine as directed on package.
  • Meanwhile, in 2-quart saucepan, melt 3 tablespoons butter over medium heat. Stir in flour and lemon-pepper seasoning. Stir in broth; heat to boiling, stirring constantly. Stir in half-and-half, sherry, shrimp and peas.
  • Drain linguine; place in 13x9-inch (3-quart) glass baking dish. Pour sauce over linguine; toss to mix.
  • In small bowl, mix 2 tablespoons melted butter and the bread crumbs. Sprinkle over shrimp mixture. Sprinkle with cheese.
  • Bake about 30 minutes or until mixture is hot and topping is golden brown.

Cooking fun: Fudgy-Caramel Brownies

 
Fudgy-Caramel Brownies 
 
INGREDIENTS:
3 oz bittersweet baking chocolate, chopped
1 cup butter or margarine
1 bag (12 oz) semisweet chocolate chips
4 eggs
1 1/2 cups sugar
2 teaspoons vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
20 creme-filled chocolate sandwich cookies, crushed
40round chewy caramels in milk chocolate (packaged in gold foil), unwrapped, each cut in half
 
DIRECTIONS:
  • Heat oven to 350°F (325°F for dark pan). Grease and flour 13x9-inch pan. In 1-quart microwavable bowl, place bittersweet chocolate, butter and 1 cup of the chocolate chips. Microwave uncovered on High 1 1/2 to 2 minutes, stirring twice, until melted and smooth. Cool slightly, about 5 minutes.
  • In large bowl, beat eggs, sugar and vanilla with electric mixer on medium speed until smooth. Add cooled chocolate mixture. Beat until well blended. Add flour, baking powder and salt. Beat on low speed until blended. By hand, stir in cookies and remaining chocolate chips. Pour into pan.
  • Bake 35 to 40 minutes or until edges begin to pull away from sides and center is set. Do not overbake. Immediately sprinkle candy on top of hot brownies. Let stand 10 minutes or until completely softened. Pull tip of toothpick through softened candy to spread and swirl. (It won’t completely cover top). Sprinkle with cashews. Cool until set, about 1 hour. For brownies, cut into 6 rows by 6 rows.

Goals are really hard.

I am working on a new goal right now. I have decided that I am not so good at reading my scriptures. Yes I was a missionary and you would think I would be perfect at such a simple task. I guess I have just found that messing with my websites and blogs has been more important. My newest goal is to reread the Book of Mormon. My goal this week is to finish 1st Nephi. I am rewarding myself with a new hat for my trip to NY. If I don't finish I don't get the hat. So Huge rewards! hehe.
