Turkey, Mushroom, & Spinach stuffed shells

Ingredients
1 lb Ground turkey
2 c Chopped mushrooms
1 cup spinach
1 box giant pasta shells
1 jar Favorite spaghetti sauce
Fresh basil
Salt-and-pepper to taste
A pinch of garlic salt
A pinch of onion powder
An Italian spice mix; basil, parsley, Oregano
Sour cream
2 cups Mozzarella
Parmesan

Directions

Cook pasta according to box.
Brown the ground turkey, Add the seasonings, Then add the chopped mushrooms and sauté. Add a little olive oil. Then add the spinach and the basil at the end. Remove from pan and chop up till fine.
In a separate bowl mix 1/2 c parmesan cheese and sour cream. Add the meat Mixture and stir together. Put the mixture in a plastic Sandwich bag, Cut the tip and use to fill the shells. In a 9 x 13 pan Add a layer of spaghetti sauce. Then lay the shells in on top. Add More sauce to cover and finally cover with cheese. The more cheese Merrier.

Deep Fried Candy Bars

If heaven was a food it would be these little gems…
yes these are deep fried mini candy bars. 
So easy to make, you will wish I never gave you the recipe cause you will want to make them all the time.

Deep Fried Candy Bars
mini candy bars – I used snickers and mars bars
tempura batter – bought it at winco
and oil for frying. 
follow package directions for the tempura batter



Tú has cumplido un año más.

For like a week before Pacer's  Birthday I had the primary song in Spanish stuck in my head, "Tú has cumplido un año más" Its a birthday song. I was motivated to do something fun for Pacer's birthday. My mom and I had purchased Pacer a pool membership, cause my husby loves to swim. So I bought him a towel and swim trunks and instead of just wrapping them up and handing them over to him. I decided to make him work for it. So I sent him on a little scavenger hunt. 




Unfortunately Pacer never got the next clue. So I had to help him. But he also figured out by the gifts where to go next. So he met a lovely bouquet of balloons and pie at the pool. 
 



We ate our Sandwich Express and then swam for an hour or so. 
We had a wonderful afternoon together. We had a family dinner on Sunday. I made a really yummy lasagna. Sorry no pics. I also made a really delicious oreo cookie dessert. Pacer finished it off before I could get a pic. But it was so good.

Oreo Cookie Dessert

Ingredients
  •   1 box instant chocolate pudding mix
  •   1/4 cup powdered sugar
  •   1 package Oreo cookies, divided,crushed (save 3/4 C.)
  •   8 ounces cream cheese
  •   1/2-1 cup butter or margarine
  •   1 can Eagle Brand Condensed Milk
  •   16 ounces Cool Whip
  •   2 cups milk
Instructions
  1. pour crushed cookies in 9x13 glass dish.
  2. melt butter, pour over cookies.
  3. mix 1/2 of the cool whip, cream cheese and powdered sugar, spread on top.
  4. mix pudding with milk and eagle brand, beat until thick, spread on top.
  5. spread on other 8 oz.
  6. cool whip.
  7. sprinkle with left over cookies.
  8. refrigerate over night

Spaghetti Carbonara

Spaghetti Carbonara

Ingredients

  • 1 pound spaghetti
  • 1/3 pound bacon (about 5 slices), diced
  • 6 eggs
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, sliced
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons freshly cracked black pepper
  • 2 teaspoons olive oil
  • 1/4 cup fresh parsley, chopped

Directions

1. Bring a pot of lightly salted water to boiling. Add spaghetti and cook 10 minutes or as per package directions. Reserve 1 1/2 cups hot pasta water.
2. Meanwhile, add bacon to a large, lidded saute pan. Cook over medium heat for 6 minutes or until slightly crispy. While bacon is cooking, whisk together 2 of the eggs and the cheese in bowl. Add garlic to pan and cook 1 to 2 minutes.
3. When pasta has finished cooking, drain and immediately add to pan with cooked bacon and garlic. Toss for 1 minute to coat noodles. Remove pan from heat and stir in egg-cheese mixture and 1 cup of the reserved pasta water. Mix constantly for 2 minutes, making sure not to scramble the eggs. Stir in salt and pepper, cover and set aside.
4. Heat 1 teaspoon of the oil in a medium nonstick skillet. Add 2 of the eggs and fry sunny-side up for 3 to 4 minutes over medium heat; set aside. Repeat with remaining 1 teaspoon oil and 2 eggs. Divide pasta evenly among four bowls (if pasta seems a bit dry, stir in remaining 1/2 cup reserved pasta water just before serving). Place 1 egg on each serving and garnish with parsley.


Kidnapping adventure II

We missed last month cause unfortunately we couldn't get the tickets we wanted until march. So we went to dayton and picked up our nephews Taylor and Bailey. First stop McDonalds for lunch. Then off to Evergreen aviation museum. We happened to be there on the weekend of a food and wine event. So the space museum was closed. Bummer!! But some of the big exhibits were outside. So after eating lunch we explored.

For those of you who have never been its pretty cool. We had fun afternoon with the boys. We're looking forward to next months kidnapping. Hmmm wonder wich family it's gonna be.




































Best Husby Ever!!

I have the most amazing husband.
I started coming down with an icky sinus infection. Like the kind that makes you want to squeeze the pressure right out of my face. So after we got dinner prepped for the elders visit, he let me go lay down and sleep for a few hours. He watched Olivia for me. After a couple hours I woke up and it was so quiet in the living room. I came out and saw this


She absolutely loves her Uncle Pacer.
He also cleaned the house and did the dishes. He is sooo amazing. Thank you my love so being so patient and supportive.
