About Autumn


It’s strange about autumn. I’ve seen it before,
But each time there’s more to see, more and more.
More redness in leaves, more brown and more gold,
More splendor in coloring than maples can hold,
More purple in haze on faraway hills,
More sparkle and music in runaway rills,
More fragrance from orchards, more birds on the wing
With summer-sweet memories that each one must sing
Before it goes winging on a long southward way,
Leaving the autumn so friendly and gay.
It’s strange about autumn—how each one holds more,
How each seems more lovely than ever before.

Pecan Sweet Potato Casserole

Pecan Sweet Potato Casserole
 
This was so delicious. I would recommend it to everyone. Even if you don't like sweet potatoes, give it a try you will convert to sweet potatoism! Yup I just made that word up.

Ingredients
  • 3 cups sweet potatoes
  • ½ cup sugar
  • ½ cup butter, softened
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • ⅓ cup milk
Topping
  • ⅓ cup butter, melted
  • 1 cup brown sugar
  • ½ cup flour
  • 1 cup chopped pecans
Instructions
  1. Boil and mash sweet potatoes.
  2. Beat in sugar, butter, eggs, vanilla and milk until smooth and creamy.
  3. Put in 9x13 greased pan.
  4. To make topping, combine topping ingredients together in a small bowl. Stir and mix to combine. Crumble topping over sweet potatoes.
  5. Bake at 350 for 30 minutes.
