Nutella & Strawberry Crepes

what you need…

Butter 2 TBS melted
Milk 2 cups
Large eggs 2
All purpose flour 1 1/2 cups
Sugar 1 TBS
Baking powder 1/2 tsp
Salt 1/2 tsp
Powdered sugar for dusting
Nutella
Jelly/ Jam
Strawberries
Whipped cream
Fresh Fruit

first melt the butter…
Put 2 TBS of butter in a microwave safe bowl and melt 30 sec.

then blend the ingredients
pour the milk into the blender, then add eggs and butter. Add the flour, granulated sugar, baking powder, and salt. Blend briefly to mix. Using a rubber spatula scrape down the sides of the blender. Blend again until smooth.

next cook the crepe…
place a nonstick frying pan over medium high heat. When the pan is hot, spread a little butter or butter spray in the pan. Pour in about  1/3 cup of the crepe batter in the pan all at once. Immediately tilt the pan and swirl the pan so that the batter evenly covers the bottom. Cook the crepe until lightly browned on the bottom (you can lift an edge with the spatula to take a peek), about 2 minutes. Using the spatula carefully flip it. Put a scoop of the filling in the middle of the crepe and spread around, while the other side cooks. Then fold in quarters and put on plate.

finally serve the crepes…
sprinkle the crepe with powdered sugar and fresh fruit. Serve warm
