Turkey Rama Fun

So every year around this time comes the Turkey Rama, its actually quite fun. All the local vendors bring there wares into the streets to sell. There is a carnival with fun rides. And lots of good eats. Pacer, Shelby(the dog) and I went to Los Molcajetes Mexican Restaurant. We sat outside and enjoyed delicious food while people watching. Then we went and picked up Abby & Grace Andrew to go have some more fun.

Bridal shower #2 complete

I need to thank Kelly for putting on a very nice bridal shower. It was so fun to see all the girls that came. We had a nice time chatting, eating and swimming. Sorry to those that missed it. We had a blast. Sorry there are no pictures. I know its a shame. I can't believe I totally forgot to take pictures. But Kelly did such a nice job. The food was wonderful, the flowers were soooooo beautiful and the pool was divine. You are the best Kelly a million thanks to you.

Bridal Shower day

yup you read that right. I am having 3 showers. The first was for all of my English speaking friends and family. The 2nd is with my girls!!! and the 3rd is with my Spanish speaking friends. 
It was such a wonderful day. A special thank you to Tessa, mom and Deb for helping out. I appreciate everything you all did to help and a huge thank you for all those who attended. It really means so much to me that you all came and supported me.

Oreo Truffles 

 

What You Need

1
pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1
pkg. (15.5 oz.) OREO Cookies, finely crushed (about 4-1/4 cups), divided
2
pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted

Make It


MIX cream cheese and 3 cups cookie crumbs until well blended.
SHAPE into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.
REFRIGERATE 1 hour or until firm. Store in tightly covered container in refrigerator.




How to Melt Chocolate
Place unwrapped chocolate squares in microwaveable bowl. Microwave on HIGH 2-1/2 min. or until chocolate is completely melted, stirring every 30 sec.
How to Easily Dip Truffles
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into bowl. Place truffles on prepared baking sheet; let stand until firm.
How to Store
Store in tightly covered container in refrigerator.






Lasagna Soup

Lasagna Soup



Ingredients for soup
2 tsp. olive oil
1-1/2 lbs. Italian sausage
3 c. chopped onions
4 garlic cloves, minced
2 tsp. dried oregano
1/2 tsp. crushed red pepper flakes
2 T. tomato paste
1 28-oz. can fire roasted diced tomatoes
2 bay leaves
6 c. chicken stock
8 oz. lasagna noodles, broken up
1/2 c. finely chopped fresh basil leaves
salt and freshly ground black pepper, to taste

Ingredients for cheesy yum
8 oz. ricotta
1/2 c. grated Parmesan cheese
1/4 tsp. salt
pinch of freshly ground pepper
2 c. shredded mozzarella cheese

Directions
Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.
Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Cook noodles separately and serve on the side. Right before serving, stir in the basil and season to taste with salt and freshly ground black pepper.
While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.
To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese.
