Camp Grandma 2012 

We had planned for our family reunion far before there was a wedding planned. So we had much planned for the week prior to the wedding. We played in the pool, the sandbox, camped in the backyard and then camped at Beverly Beach in Newport, we played in the ocean and on the beach. We roasted marshmallows and made s'mores. We played in the "jungle" and on the playground. We had so much fun together as a family.

The last and final Bridal Shower

I want to thank everyone who helped make me feel so special before my big day. The sisters from the Spanish branch gave me the last of my bridal showers. It was a lovely day. We had a day spa shower. We swam and did toes, fingernails, and facials. It was marvelous. I also received some really wonderful advice from sisters I care about so much.

Zucchini Pasta with Pomodoro Sauce

Zucchini Pasta with Pomodoro Sauce

Ingredients

  • 2 garlic cloves, minced
  • 2 tablespoons onion, diced 
  • 2 tablespoons leeks, chopped
  • 2 tablespoons olive oil
  • 3 tomatoes, chopped
  • 3 tablespoons fresh herbs (oregano, basil, parsley), chopped
  • Salt and pepper, to taste
  • Pinch sugar
  • 3 whole zucchini cleaned and sliced thinly like pasta 
  • Parmesan or mozzarella,  grated

Directions

In a saucepan over medium heat, saute garlic and onion in oil for 2 minutes. Add tomatoes and herbs, continue to cook for 5 minutes until the tomatoes soften. Season with salt, pepper and sugar. Meanwhile bring a pot of salted water to boil and add zucchini, cook until soft. Put sauce in food processor and pulse do not over blend. You want a few chunks. Combine pasta and sauce in a bowl and sprinkle with cheese. Serve hot and with some toasted sour dough bread. Yummy!!





Blackberry Breakfast Crepes

Blackberry Breakfast Crepes


1 cup flour (optionally sifted)
2 eggs
2 tbsps melted butter (cooled)
12 cup sugar (depending on preference)
12 cup whole milk
12 cup water
12 tbsp vanilla (optional)
cream cheese (softened)
preserves (blackberry) or fresh blackberries
whipped cream
powdered sugar


1Mix all of the liquid ingredients together with the eggs and sugar. Stir in flour gently, otherwise your crepes will turn out rubbery.
2For the filling, combine the cream cheese, powdered sugar and preserves first. Then fold in the whipped cream so that the filling will be fluffier and light.
3I didn't add any measurements for the filling, because some people might want more or less. Just whip up as much as you think you'll need. The cream cheese and the blackberry preserves will be the most prominent flavors, so be sure add enough whipped cream to mellow it out a bit. Basically, you can do this to taste.

We have a new home!!!

The New house 

Life has been crazy, not only have we been planning a wedding, but we have also been moving into our new place. It has taken over a month to get all moved in. Thank goodness it's only a few minutes from my parent's house, not so far for all the millions of trips back and forth. But we really love our new place. Its a wonderful two bedroom duplex on Westvale. The animals have plenty of running space and added bonus back yard. We can hardly wait to get our lives started as a married couple in our first home. woohoo. Let the adventures begin… visitors are always welcome.
