Exploring our town

It was a beautiful day here in McMinnville today. We decided it was time to explore the area. We took our cameras and went to a nature habitat. The dog loved our adventure she came home and passed out on the sofa. I was able to try out my new lens baby lens.

I love to cook so much. 

I am grateful my husband does too. We love being in the kitchen together. We enjoy experimenting with new recipes and playing with different flavors. My goal this year is to keep myself more organized. If that is even possible. Anyways I created this binder that holds my stake calender, my primary calendar, my weekly calendar, my menus, & shopping lists, and the last section is the finance section. I am putting up some pictures of recent explorations in the kitchen. If you want a recipe I can dig em up out of my head and post em. But in the meantime enjoy your delectable eye feast.

Avocado Mac and Cheese

Avocado Mac and Cheese


Ingredients 

10 ounces dry elbow macaroni
2 cloves garlic, minced
2 avocados, peeled and pitted
2 tablespoons fresh lime juice
1/3 cup chopped fresh cilantro
Salt and pepper, to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
2 cups shredded Pepper Jack cheese
Salt and pepper, to taste
Fresh avocado chunks, for garnish, if desired

Directions:

1. Bring water to a boil in a large pot. Salt the water and add in macaroni. Stir and cook until Al Dente, about 8-10 minutes. Drain and set aside.
2. While the pasta is cooking, make the avocado sauce by placing the garlic, avocados, lime juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy. Set aside.
3. To make the cheese sauce, place butter in a small saucepan and heat over medium heat. When butter is melted, whisk in flour to create a paste. Whisk in milk until smooth. Stir with a wooden spoon until the sauce starts to thicken. Add in Pepper Jack cheese and stir until cheese is melted and sauce is creamy.
4. Place macaroni in a large bowl. Pour the avocado sauce over the macaroni and stir until well coated. Add the cheese sauce and stir until macaroni is coated and creamy. Season with salt and pepper, to taste. Serve warm. Garnish with fresh avocado chunks, if desired. 



"CHEWS" the right party

Our theme was Choose the Right last year. So we had a Chews the right theme
 
We had our end of the year party at the church with the primary kids. We played the game of life, where the kids had to roll the dice and move forward along the path. Each spot they either had to answer a question, do an act or choose the right, or wrong. It was fun. The kids had a great time. Once they ended up at the end of the path they got a delicious cupcake, and a gumball machine with a CTR bracelet.


















Kidnapped!!!

Pacer and I have decided that we want to get to know our nieces and nephews better. So each month we are choosing a family to "Kidnap," and do something fun with them.

a date at the McMinnville Aquatic Center

We went to their house and picked them up, they knew only that we were going to take them for a super special surprise. We collected their bags and headed for the pool. They made all sorts of guesses as to what we would be doing, of course they were sooooo wrong. We pulled up to the park and they got really excited thinking that we were taking them to the dragon park. But no when we took them into the swimming pool they were a little indifferent about the idea. But as soon as we got their suits on and jumped in the pool. They changed their minds pretty quick. They had a blast. Pacer especially he's my fishy husband. He would live in the pool if he could. 
We swam for close to 2 hours, then off to shower and change. As one final activity we went to DQ for ice creams. Olivia talked about it for days after…actually she is still talking about how Uncle Pacer & Aunt Jade took them swimming and got ice cream. 

It so much fun to get to know them. They have the cutest personalities. So this month is another one of our family members.
