Christmas Eve

We have always had the family tradition of eating Christmas eve dinner at Grandma Christensen's house. Last night was no different, after a very productive day we headed out across town. Dinner was super delicious and the entertainment was wonderful as always. The kids had a blast. Its so fun to see them experience Christmas.

A Joseph Smith Birthday Party 

I read this article about a group of seminary students in Portsmouth that recreated that Nauvoo party.

"When the first guests walked up the snowy path to the home of Dell and Laura Fox on December 23, 15 costumed teenagers were still running upstairs and down, checking fireplaces, whipping cream, arranging ringlets, and threading yarn through oversized needles. Our “Joseph Smith Birthday Party” was the culmination of four months of study in our Church history course. Early in the fall we began collecting ideas and materials. We wanted everything—food, costumes, games, program—to be as true to the period 1805–1844 as possible. "

Merry Christmas Cupcakes

I found these really cute cupcake boxes for Christmas gifts for our neighbors. They each held 6 cupcakes, so I wanted to bake 3 different kinds. I chose a delicious better than sex chocolate cake, lemon cake and a peppermint cake. They all turned out beautifully. I forgot to take pictures of them in the boxes. But I did take some of the cupcakes. I also will be doing a post for each of the cupcakes with the recipe for my cookbook. So keep an eye out… 
 









Peppermint Cupcakes

Peppermint Cupcakes

ingredients
1 1/2 cups all-purpose flour , sifted
1 tsp. baking powder
1/4 tsp. coarse salt
1/2 cup whole milk , room temperature
1 tsp. pure vanilla extract
1 tsp. peppermint extract
1/2 cup (1 stick) unsalted butter , room temperature
1 cup sugar
1 large egg , room temperature
2 large egg whites , room temperature
1/2 c crushed peppermint candies
Preheat oven to 350°. Line a 12-cup muffin tin with cupcake liners; set aside. In a medium bowl, whisk together flour, baking powder and salt; set aside.In a small bowl, mix together milk and extracts; set aside.In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium-high speed, until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce the mixer speed to medium and slowly add egg and egg whites until just blended.With the mixer on low, slowly add half the flour mixture; mix until just blended. Add the milk mixture; mix until just blended. Slowly add remaining flour mixture, scraping down sides of the bowl with a spatula, as necessary, until just blended. Add crushed peppermints and mix in. Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake until tops are just dry to the touch, 22 to 25 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely in tin before icing.
Cream Cheese Frosting 
2 (8) ounce package cream cheese, softened
1 stick butter, softened
2 lbs. confectioners’ sugar
2 teaspoons vanilla extract
juice of one lemon

Using a mixer, blend the butter and cream cheese together until well combined. Gradually add in the confectioners’ sugar until fully incorporated. Finally mix in vanilla and lemon juice. I added a little peppermint extract.
