Four cheese white pizza

Pacer and I saw this recipe in a magazine while standing in line at Bimart. It was meant to be, so we decided to make the pizza but of course add our own stuff and make it super yummy.

Four cheese white pizza a la Jade & Pacer
recipe originally from BH&G we adapted to our liking.



1 pound prepared pizza dough, at room temperature we used Winco pizza dough*it was super yummy*
Nonstick cooking spray
2 tablespoons olive oil
4 cloves garlic, coarsely chopped
6 ounces fresh baby spinach
1 cup shredded mozzarella cheese (4 ounces)
1/2 cup shredded provolone cheese (2 ounces)
1/2 cup shredded Asiago cheese (2 ounces)
3/4 cup ricotta cheese
2 tablespoons toasted pine nuts 
jar artichoke hearts
1/2 package of sun dried tomatoes, sliced or to liking
 
Directions
 
1. If using prepared pizza dough, follow package directions. Preheat oven to 500 degrees F. Coat a 14-inch pizza pan with cooking spray; set aside. We used a pizza stone it cooked the pizza perfectly. A much better choice.
2. In a medium nonstick skillet heat 1 tablespoon of the oil over medium-high heat. Add garlic; cook and stir for 30 seconds. Gradually add spinach; cook about 2 minutes or just until wilted. Remove from heat.
3. On a lightly floured surface, roll dough into a 14-inch circle. Transfer to the prepared pizza pan.
4. In a medium bowl combine mozzarella, provolone, and Asiago cheeses. Sprinkle half of the cheese mixture over dough. Top with spinach; drizzle any oil and garlic remaining in skillet over spinach. Sprinkle with the remaining cheese mixture. Add artichokes and sun dried tomatoes. Top with spoonfuls of ricotta cheese; drizzle with the remaining 1 tablespoon oil.
5. Bake for 14 to 15 minutes or until crust is brown on the bottom. Sprinkle with pine nuts.*except if your Pacer you burn the pine nuts and emit them from the recipe*

Amazing Whole Wheat Pizza Crust

 Amazing Whole Wheat Pizza Crust
Ingredients:
1 teaspoon white sugar
1 1/2 cups warm water (110 degrees F
/45 degrees C)
1 tablespoon active dry yeast
1 tablespoon olive oil
1 teaspoon salt
2 cups whole wheat flour
1 1/2 cups all-purpose flour
Directions:
1. In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
2. Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
3. When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
4. Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
5. Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Cannon Beach to McMinnville

So after Seaside we decided to head down the coast. We stopped in Cannon Beach and then we enjoyed the coastal drive all the way down and through Hebo back to McMinnville. Where we stopped at Geraldi's for pizza. Yummy. What a great day!










 These next few picture are from McMinnville. We went to the pizza place in town...yummmy!!!!
