Zucchini Pasta with Pomodoro Sauce
Ingredients
- 2 garlic cloves, minced
- 2 tablespoons onion, diced
- 2 tablespoons leeks, chopped
- 2 tablespoons olive oil
- 3 tomatoes, chopped
- 3 tablespoons fresh herbs (oregano, basil, parsley), chopped
- Salt and pepper, to taste
- Pinch sugar
- 3 whole zucchini cleaned and sliced thinly like pasta
- Parmesan or mozzarella, grated
Directions
In a saucepan over medium heat, saute garlic
and onion in oil for 2 minutes. Add tomatoes and herbs, continue to
cook for 5 minutes until the tomatoes soften. Season with salt, pepper
and sugar. Meanwhile bring a pot of salted water to boil and add zucchini, cook until soft. Put sauce in food processor and pulse do not over blend. You want a few chunks. Combine pasta and sauce in a bowl and sprinkle with cheese. Serve hot and with some toasted sour dough bread. Yummy!!
