South Coast Hominy

South Coast Hominy

½ c Chopped onion
½ c chopped green pepper
5 Tbs butter, divided
3 Tbs flour
1 tsp salt
     ½ tsp ground mustard
dash cayenne pepper
1 ½ c milk
1 c shredded cheddar cheese
1 can white hominy, drained
½ c sliced olives
½ c bread crumbs

In a skillet, sauté onion and green pepper in 3 Tbs butter until tender.  Add flour, salt, mustard, and cayenne; cook and stir until smooth and bubbly, about 2 minutes.  Gradually add milk; bring to a boil. Boil 2 min. stirring, constantly. Stir in cheese until melted. Remove from heat; add hominy and olives.  Pour into baking dish. Melt remaining butter and toss with bread crumbs and sprinkle on hominy mix. Bake uncovered, 375 for 30 min.
